    Baked Meatballs

    Ingredients

    • 1 tablespoon Extra Virgin Olive Oil
    • 1/2 Green Onion, finely chopped
    • 3 Garlic Cloves, minced
    • 1/2 pound Ground Veal
    • 1/2 pound Ground Beef
    • 1/2 pound Ground Pork
    • 1/4 cup Homemade Mayonnaise (see recipe )
    • 2 Whole Eggs
    • 1/2 teaspoon Salt
    • 1/4 teaspoon Pepper

    Heat oven to 375°F. In a skillet, over medium-high heat, cook onion in olive oil for 5 minutes, stirring frequently, until softened. Add garlic and cook an additional minute. Transfer to a bowl and mix in ground meats, mayonnaise, eggs, salt and pepper. Roll into golf ball-size meatballs. Place on a jelly roll pan. Bake 20-25 minutes until browned and thoroughly cooked.
