    Avocado Chicken Salad


    • 2 cups chicken, cooked, shredded
    • 2 tablespoon dried cranberries, no added sugar
    • 1 large avocado, mashed
    • 2 tablespoons fresh cilantro, finely chopped
    • 1/2 cup green apple, finely chopped
    • Juice of 1 lime
    • 1/4 cup red seedless grapes, cut in half
    • 2 tablespoons walnuts, raw, chopped
    • Salt and black pepper to taste

    In a big bowl, combine shredded chicken, mashed avocado, chopped apple, halved grapes, chopped walnuts, cranberries, and cilantro. Mix well. Add lime juice and salt and pepper to taste. Blend well. Can be enjoyed as is or dipped with favorite raw vegetables.
