    Italian Style Stuffed Peppers


    • 2 bell peppers, halved and cleaned
    • 4 cloves garlic, chopped finely
    • 1 tablespoon coconut oil
    • 1/2 cup tomatoes, diced, fresh or canned
    • 1/2 large onion, diced
    • 1 lb ground beef
    • Salt and black pepper to taste
    • 2 teaspoons basil, ground

    Preheat oven to 375°F. Place bell pepper halves in a roasting dish face down and bake for 10-15 minutes. (This step can be skipped if a firmer pepper is preferred). Set aside. Heat coconut oil in a large skillet over medium-high heat. Sauté onions until translucent, adding salt and black pepper to taste. Add tomatoes and garlic to the onions, and simmer an additional 2 minutes. Add ground beef and cook until browned. Add basil and stir. Taste the mixture and season as desired. Spoon stuffing mixture into pepper. Bake 15-20 minutes.
