    Citrus Macadamia Nut Sole


    • 1/4 cup macadamia nuts, chopped
    • Zest of one orange
    • 1 pound lemon sole or other white fish
    • 2 tablespoons butter or coconut oil
    • Salt and black pepper to taste

    In a small bowl, combine macadamia nuts and orange zest. Set aside. Place the lemon sole on a baking sheet, season with salt and black pepper to taste, then top evenly with butter or coconut oil and nut/zest topping. Place the fish in the broiler and cook approximately 10 minutes or until opaque throughout inside.

    Recipe yield: 3-4 servings
