    Paleo Pancakes


    • 2 ripe bananas or 1 cup of pumpkin
    • 1 whole egg
    • 1-2 tablespoons almond butter, no added sugar
    • 1/4 teaspoon cinnamon
    • 1/4 cup coconut oil or butter
    • 1 cup assorted berries, fresh

    Mash bananas or pumpkin in bowl. Add egg, almond butter and cinnamon, and blend well. Heat skillet over medium heat. Add small amount of coconut oil or butter to coat the bottom of skillet. Pour approximately 1/4 cup batter into skillet and cook until golden brown. Flip and brown other side. Top with assorted berries.
