    Roasted Garlic Vinaigrette

    Ingredients

    • 1/2 cup olive oil
    • 1/2 cup red wine vinegar
    • 1/4 cup garlic, minced
    • 1/4 cup dijon mustard
    • 1 teaspoon oregano, dried
    • 1 teaspoon basil, dried
    • 3/4 teaspoon black pepper
    • 3/4 teaspoon kosher salt

    In a bowl, combine all ingredients. Blend well and chill. If thinner dressing is desired, add 1/2 teaspoon vinegar until desired consistency is reached.

    Recipe yield: 8 1/4 cup servings
