    Homemade Mayonnaise

    Ingredients

    • 2 egg yolks
    • 1 teaspoon dijon mustard
    • 2 1/2 teaspoons lemon juice
    • 1/4 teaspoon salt
    • 1/2 cup extra virgin olive oil
    • 1/2 cup coconut oil
    • Black or white pepper to taste (optional)

    In a food processor, process yolks, mustard, lemon juice and salt until smooth. While processing, add oils very slowly until emulsion forms and thickens. Season with salt and pepper to taste.

    Variation: Bacon fat can be substituted for oils (1 cup).

    Recipe Yields: 1 1/4 cup
